Recipe for Espresso Steamed Eggs


FOR THE EGGS                  90g Beaten Eggs           
0.5 pinch salt
0.5 pinch cayenne
25g Butter
Brioche cut into 10cm long
by 1.2 cm wide, by 1.2 cm thick

Season 90g eggs with salt, cayenne and a nugget of butter and put in a bowl.
Use the cappuccino frother to steam the eggs until just set.
Spoon into espresso cups.
Saute brioche in butter until golden on all sides.
